Cod fried with garlic sauce by Marieta Iosifidou
March 25th and Palm Sunday, in Greece, we eat fish and even fried cod with garlic.
They are two special days, which catalyze "fish, oil and wine" in the great Lent Fast.
The salted cod that arrived on the Greek table in the 15th century. It is a fish caught mainly on the coasts of the North-East Atlantic and in large quantities. This leads, to be preserved in salt, it becomes pickled (so easy to preserve in a Greece where there are no refrigerators in the previous centuries) and it was an economic economy. This is how it entered as a culinary custom of Greece, a custom that continues to this day.
Ingredients
- 1 pound cod soaked
- 1 box (330 ml) beer
- 1 spoon ketchup
- 1 little spoon mustard
- 2 cups flour
- 2 little spoons baking powder
- 1/2 spoon, Salt
- Oil for frying
- 1 more cup of flour to wrap pieces of cod before putting them in the batter
Execution
Removing the salt and skin from the cod and cut into pieces.
Change the water every 4 hours for 24hours
until the cod to be out of very salt.
Remove fish from water and push with our hands to go out the most of liquids.
Put cod pieces in the kitchen paper for 1-2 minutes to be very dry.
Put the fish in the reftigerator until be ready the batter.
Batter
In a bowl, add the 2 cups flour, baking powder, salt, ketchup, mustard, and beer. Mix the ingredients well, until a light batter.
To fry the haddock, Heat plenty of olive oil (vegetable oil) in a pan
And after passing the first bits cod of flour, dip in batter and fry in hot oil
Until well browned on both sides.
Place the finished pieces on a platter with absorbent kitchen paper to absorb the many oil and serve with garlic sauce.
Garlic sauce with nuts
Ingredients
- 3-4 cloves of garlic
- 1/2 cup olive oil
- 2 spoon wine vinegar
- little salt
- 2 cups stale bread, soaked in water and squeezed very well
- 1 cup nuts
Execution
Put all ingredients in blender beat well. Beat until the sauce becomes a homogeneous.
If it is too tight, add little water of vinegar.
Put the sauce in the fridge to cool down and be solid.
